Thai Curry Recipes without the Use of Curry Paste

Thai food use a lot of curry paste. For people that are not used to this strong flavor it can be overpowering. Others may have trouble finding curry paste in their local grocery store. This is a great Thai curry recipe with paste.
Curried Thai Vegetables
1 tbs. oil
1 onion, chopped
2 tsp. garlic, minced
1 tbs. ground ginger
2 dried red chilies, diced
Zest of ½ a lemon
½ tsp ground cloves
½ tsp ground cinnamon
12 ground cardamom seeds
2 tbs. brown sugar
2tbs. tamarind paste
1 can coconut milk
1 cup chopped mixed vegetables

In a pan cook the onion and garlic in oil until they become soft. Add the chilies, lemon zest, cloves, cinnamon, and cardamom. Add the sugar and the tamarind. Add the coconut milk. Add the vegetables. Cook until they are tender. Garnish with the peanuts.
This recipe is tasty and there is no need to any curry paste. The nuts will a nice crunch and will take some of the heat away.
